Semalam akak sempat lah buat muffin untuk kudapan..lagipun dah lama simpan resepi dari dapur Rinnchan ni...memandangkan jem marmalade hari tu ada sikit lagi..so igt nak habiskan jek..nnt bulan pose ntah usik ntah kan tidak..hehe..Pastu tengok marmalade muffin ni nampak sedap jek kat dapur Rinn tu..x tahan tengok jem kat muffin tuh...memang sedap...bawak kat budak2 ofis ni pun diaorang cakap sedap...tapi akak wat half je dari resepi di bawah..Akak kopipes je lah dari dapur Rinn tu...xyah translate la kan..simple n ez...hehe
Ingredients : (Note: Separuh adunan dpt 15 biji)
- 280 gm butter
- 240 gm caster sugar
- 4 eggs
- 2 teaspn vanilla essence
- 250 ml fresh milk
- 400 gm all-purpose flour
- 4 teaspn baking powder ( If using self raising flour, then omit the baking powder)
Method:
- Beat butter and sugar until creamy.
- Add in egg one at a time and continue beating.
- Add in vanilla essence and milk.
- Sift flour and baking powder. Fold in into butter mixture little by little using spatula. Do not overmix.
- Spoon batter into papercups half full. Then put half spoon of jam. Cover again with batter until almost full. Add a little more jam on top.
- Bake at 180 deg cel for about 25 minutes.
