Sambal Ikan Rica-Rica Cheftania

Punyalah lama simpan resepi dari Cheftania ni...hampir terlupa dan hilang dari pandangan dah resepi nih..hehe..sedap rupanya..kalu tau, lama dah buat..Cheftania, thanx a lot for sharing..Here's the original recipe:-
Ingredients:-
1 kg mackerel (i used selar besar)
(rub with a little salt and tumeric powder, fry half cook)
12 nos. cherry tomatoes
20 nos. thai basil
2 nos. bruised lemongrass
2 nos. onion shredded
5 nos. kalamansi extract juice (limau kasturi)
5 tbsp. oil for frying
salt and sugar to taste
Grounded Ingredients:-
15 nos. red chillies
4 nos. garlic
1 tbsp. belacan
1 slice galangal (lengkuas)
(*grind all above into paste - add about 1/2 cup water to grind)
Methods:-
  1. Heat up oil and add in the grounded paste and bruised lemongrass, stir fry until fragrant.
  2. Add in the onions, tomatoes, juice, salt, sugar and half of the basil leaves and stir.
  3. Lastly add in the fish and balance of basil.
  4. Mix well and ready to be served.
