Nasi Impit Kuah Kacang

Ini kes x puas makan ketupat nasi masa raya dulu laa...balik ke rumah kita wat nasi impit Nona je laaa...xda bungkus dlm daun ketupat dah laaa.....Kebetulan buat buka puasa gak kelmarin...Minggu pose ni masak sempoi2 je laaa, nak letak entry pun maleh...hb suka berbuka lauk singgang2 gitu jek...Ni akak yg teringin nak masak kuah kacang sendiri....pastu wat jemput sikit, colek2 dengan kuah kacang..bestttt..hehee..Okayy ni style akak masak kuah kacang la yea..kalau nak mencuba silakan....

KUAH KACANG NASI IMPIT (my style)

Bahan:-
  • 300 gm kacang tanah yang telah digoreng dan dikisar
  • 20 tangkai cili kering - dikisar
  • 12 ulas bawang merah - dikisar
  • 3 ulas bawang putih - dikisar
  • 3 cm lengkuas - dikisar
  • 4 batang serai - diambil bhg putihnya dan dikisar
  • 2 - 3 sudu besar udang kering - direndam, tos dan dikisar/tumbuk halus
  • 3 batang serai lagi - diketuk
  • 1 btg kulit kayu manis
  • 2 kuntum bunga lawang
  • 1/3 cawan jus asam jawa pekat
  • 2/3 cawan gula melaka
  • garam secukup rasa
  • 7 cawan air atau secukupnya
  • Sedikit minyak untuk menumis (+ - 1/3 cawan)
Cara Memasak:-
  1. Panaskan minyak dalam caserol/periuk, tumiskan serai yg diketuk, kulit kayu manis dan bunga lawang hingga wangi.
  2. Masukkan bahan kisar, perlahankan api dan masak hingga cili terbit minyak sambil dikacau.
  3. Masukkan kacang tanah dan sebahagian air dan masak hingga mendidih dan sedikit pekat.
  4. Masukkan gula melaka, air asam jawa dan garam
  5. Tambah lagi air selebihnya dan masak lagi dengan api sederhana sahaja sehingga kuah kacang benar2 naik minyak dan renehkan biar pekat dan warna kemerahan jugak atau terpulang jika suka kuah cair sedikit.
  6. Seimbangkan rasa mengikut tekak masing2 biar pedas2 manis sikit dan tutup api. Hidangkan bersama nasi impit.

Hello Ummi, I suka your this lovely dish....nasi impit.
If you don't mind, may I have this picture for my folder, bila nak buka cherita about food, will display....

Ummi, at the dinner with his Majesty the Agung, there was this dish, fish lemak with bamboo slices. Warna lemak tu kuning. As well the scent was out of this World. Pity ta'chance makan second round as long que.

We were lucky as near the buffet table, and 4 tables away from the King's table.
Nak go for second round kena line up again, lecheh....but! the owner of restaurant let my wife and several ladies bungkus home a lot of food left.

My isteri asked me to ask you how to make that fish bamboo shoot lemak. Also to get the wangi. I think ada lemon grass?

I would really appreciate it if you'll pass me your special secret recipe, ha ha.....
My wife wants to cook that next day when we invite friends over for dinner.

ummi, agak2 uncle maksudkan ikan percik kut.. dia org bakar ikan dgn guna buluh cam ayam percik kelantan tu..
