Kari Kepala Ikan

Didn't cook this for quite sometime and yesterday my hb asked for it...he wanted my own style one!!! Hahaa..no problem yang...x payah susah nak cari resepi mana2...terpahat di ingatan...wahahaa...This time around, i didn't add any chilli paste, takut perut meragam lg....Hb akak kan, makan banyaknyaaaa....me too..hehe...berbaloi2 la penat masak pun..Rasanya dah penah letak entry....it's ok, i write down the recipe once again!!!

KARI KEPALA IKAN

Bahan:-

  • 600 gm kepala ikan jemuduk (apa2 ikan besar pun boleh)
  • 4 sudu besar serbuk kari ikan *
  • 1 cawan santan pekat * (* dibancuh bersama)
  • 1 sudu besar cili kisar (optional - akak x letak kali ni)
  • 5 biji bawang merah (ditumbuk)
  • 3 ulas bawang putih (ditumbuk)
  • 2 inci halia (dihiris halus/ditumbuk)
  • 2 tangkai daun kari
  • 1 sudu teh halba/herba campur
  • 1/4 cawan air asam jawa
  • 1 1/2 sudu teh serbuk ketumbar
  • 2 1/2 - 3 cawan santan cair
  • 2 biji cili hijau - dibelah
  • 2 biji tomato - dibelah 4
  • 8 batang bendi
  • garam secukup rasa
  • sedikit minyak untuk menumis

Cara Memasak:-

  1. Panaskan minyak dalam caserol/periuk, tumiskan halba campur, daun kari dan bahan tumbuk. Kacau hingga naik bau.
  2. Masukkan bancuhan serbuk kari dan serbuk ketumbar. Perlahankan api dan masak hingga pecah minyak. Kacau2 selalu.
  3. Masukkan air asam jawa, kacau dan kepala ikan tadi. Kacau balik perlahan agar ikan mesra dengan kari tadi sebentar.
  4. Masukkan santan cair dan garam secukup rasa dan masak atas api sederhana. Biarkan kuah mendidih.
  5. Perlahankan lagi api dan masukkan bendi dan sayuran lain. Biar kuah naik kemerah-merahan/naik minyak (biasa akak akan tutup periuk/caserol sebentar untuk proses ni selama 3 - 5 minit). Tutup api dan boleh buka tudung periuk agar sayur tidak layu sangat. Selamat Mencuba!!

Hello Ummi, INI LA BEST! MY FAVOURITE!
Because of this dish saya hilang my Bachelor's degree...I married the cook, arhaaaa ha ha.
She had learnt fish head curry my weakness, she asked her Malay and Nyonya friends to teach her.
The rest she improvised, rempah agak2, ha ha.
Da makan...fikran saya pun da la tukar, nak chabut pun dan susa, ha ha,

Ummi, I suka your Teraki ayam, alamak...itu macham Kentucky ayam, 'finger lickin' good', ha ha.

And your this fish head curry, boleh dapat the beautiful rempah scent disini pun...saya suka tu you put that chili hijau.
Ahhh< I must tell my wife about it. Tell her the best cook in Kuantan put sliced green chili beside the fish head.
