Hari ni hujan lebat tak berhenti2 di Kuantan nih...sejak dari petang semalam lagi...ada jemputan kenduri jiran sebelah rumah my parents kat kampung, rasa malasnya nak bergerak..tp kena pergi jugaklah...tinggal sekejap Aiman dgn Kakngah ni...Xpalah, pergi kenduri dapat pahala kan..hehe..janji ikhlas...perut pun kenyang...wahahaa..Ok, meh layan menu dinner malam tadi...resepi asal Chef Florence Tan ni dikongsi oleh Mat Gebu dan akak ceduk dari Sini. So akak copy n paste je la ya Mat...sedap sesangat...thanks!! So jamu mata eh..akak nak pergi kenduri dulu...byeeee..
- 1 ekor ikan siakap (ikan merah/kerapu atau ikan bawal putih pun ok)
- 1/2 camca teh garam
- 1/2 camca teh tepung jagung
- 1/2 camca teh lada sulah
- 3 camca besar jus limau kasturi*
- 1 1/2 camca besar minyak masak*
- 1 1/2 camca teh gula*
- 1/2 camca teh garam*
- 5 - 10 biji cili padi, dihiris*
- 2 batang serai, dihiris halus*
- 1/2 kuntum bunga kantan, dihiris*
- 1 helai daun limau purut, dihiris halus*
- 1/2 inci halia muda. dihiris halus*
- 2 ulas bawang putih, dihiris halus*
- 1/2 camca teh tepung jagung*
- 1/2 camca teh serbuk pati ikan bilis atau 1/2 kiub pati ikan bilis maggi*.
CARA-CARA:-
- Ikan dicuci bersih dan lumurkan dgn garam, tepung jagung dan serbuk lada sulah. Ketepikan sementara membuat sosnya.
- Dalam satu bekas satukan kesemua bahan sos (yang bertanda '*") hingga sebati. Ketepikan.
- Panaskan kukusan dan sediakan bekas tahan panas. Letak ikan tadi ke dalam bekas tahan panas dan tuangkan sosnya rata termasuk bahagian dalam belahan perutnya.
- Kukus kurang lebih 10 minit bergantung pada saiz ikan atau apa bila daging ikan bertukar menjadi putih.
- Siap untuk dihidangkan dgn nasi hangat. Selok-eloknya dimakan segera selepas proses mengukus.
UMMI! UMMI! Omigosh! Ikan siakap! Ikan siakap kukus!

I have not eaten this dish, or fish I think if I remember, wayyyyy back to 1981, in Marang, Trengganu, if not mistaken.
Ummi...kalu saya di Kuantan sekarang, saya chepat pergi chari a tukang buat signboard, I put infront of your rumah, "AWAS, PERUMPUAN INI DANGEROUS"!
(I forgot the Malay word for 'dangerous', ha ha).
Ummi, saya tengok this fantastic, delicious dish, agak agak nya tiga pingan stengah boleh jalan, arhaaa ha ha.
I'm sure you ada buat your famous Kuantan sambal belachan too, huh? Habis la! Kena buka tali pingang tu, arhaaa ha ha.
Even I don't eat with hands, I will bila dapat makan ikan ni. Where's your wash basin?

ReplyDeleteHaha..datang pun you ya..Do come in..it's my pleasure..Waaah, never know that you've had missed this Siakap Kukus for a long long time..that's why I've been thinking to invite you makan here..hehe..So funny when you got to eat with hands and loosen up your tali pinggang..no laaaa...You're joking! I'm definitely not dangerous (Malay word = merbahaya) yet..got many more to catch up or to tackle with laaa..Sambal belachan?? Of course ada..Utara mari...hehe..my mom was from Kubang Semang, Seberang Perai, you know..still balik kampung once a year and me ikut jugak if free..
Actually I was very seldom been at Teluk Chempedak during my study in Kuantan, just stayed at hostel (Taman Gelora), no dates, lebih baik tidur if no lectures..hehe..That's why you've had never come across the path..hahaa

Ummi, out of curiousity, berapa ringgit ikan tu?
Long time ago I used to stop at a Malay kedai makan dekat Cherating....I think I had ikan siakap there, but in a different style recipie.
And again, I used to drive home terus from KB to KL, often in the evening dekat Kuantan ada budak2 jual crabs, tepi sungei, lupa nama sungei tu...they gantong the crabs on a tree branch.
And quite often it's late, they nak balek rumah...I stop and abit of haggling, saya sapu semua, "okay la incik, semua ni special, da petang...sepuluh rinngit incik angkat".
I bring home give some to my Malay neighbours, my wife make steamed crab. Lee.
